Mission
The mission of the Catholic Women’s Luncheon series is to promote the dignity of women and advance the appreciation of authentic Christian femininity through education and fellowship.
Purpose
To direct women of the various ways they can transform the workplace and society through her Christian vocation and authentic femininity. Through an on-going speaker/lunch format women will be challenged and encouraged to sanctify and transform culture through the gift of their femininity. Luncheons scheduled from 11:30am -1:00pm to respect individuals' schedules. These luncheons will be located in various places and times featuring speakers and resources.

Cost: $45.00
Menu: Salad, Famous San Francisco Swiss Cheese, Beef Tenderloin Medallion topped with Cherry Demi-Glace, Rosemary Roasted Potatoes, Grilled Green Beans Almandine, Chocolate Lava Cake, Bread Basket, Iced tea and Coffee.

Eve was not on a diet! Why we have a body, why we hunger, and why nothing satisfies. Come and hear Amber Pilkington, Licensed Professional Counselor Intern at Dignity Women’s Center as she shares her personal experience with an eating disorder and recovery. She will share a unique look at Theology of the Body for all women as we learn about our relationship with food and our body from a Catholic Perspective.
About the Speaker
Amber Pilkington received her Master of Psychology degree from the University of Dallas. Prior to working for Dignity Women’s Center, she worked as a Mental Health Counselor at Menninger Specialty Psychiatric Hospital in Houston, Texas, a top ten psychiatric hospital in the U.S. She has also worked at Timberlawn Mental Health Hospital on the trauma unit in Dallas, Texas and Immaculate Conception Catholic Church in Denton, Texas as a staff therapist. She has several publications in “The Journal of Humanistic Psychology”, an American Psychological Association Journal.
Amber is a member of Catholic Therapists and American Association of Christian Counselors and has experience in integrating a client’s spiritual beliefs into therapy. At Dignity Women’s Center, she is committed to promoting the dignity of every woman by providing care for her total person – mind, body, and soul.
